Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
Optional for decorating:
- Icing, sprinkles, or powdered sugar
Instructions:
- Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
- In a large bowl or mixer, cream together the softened butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.
- Scoop out rounded tablespoons of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie.
- Flatten each ball slightly with the back of a fork or your hand.
- Bake in the preheated oven for 8-10 minutes or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once the cookies are completely cooled, you can decorate them with icing, sprinkles, or powdered sugar if desired.
