Ingredients:

  • 2 pounds stewing beef, cubed
  • 1 onion, finely chopped
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1/4 cup all-purpose flour
  • Fresh parsley, chopped (for garnish)

Serving: 6 servings

Cook Time: 2 hours

Instructions:

  1. Toss cubed beef with flour in a mixing bowl until coated.
  2. Brown floured beef cubes in vegetable oil in a casserole pot; set aside.
  3. Sauté onion and garlic in the same pot until translucent.
  4. Add carrots, potatoes, diced tomatoes, tomato paste, thyme, and rosemary; season with salt and pepper.
  5. Return beef to the pot and pour in beef broth; stir gently to combine.
