Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Optional for decorating:

  • Icing, sprinkles, or powdered sugar

Instructions:

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
  3. In a large bowl or mixer, cream together the softened butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla extract. Mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.
  5. Scoop out rounded tablespoons of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie.
  6. Flatten each ball slightly with the back of a fork or your hand.
  7. Bake in the preheated oven for 8-10 minutes or until the edges are set but the centers are still soft.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. Once the cookies are completely cooled, you can decorate them with icing, sprinkles, or powdered sugar if desired.
